These Oatmeal Chocolate Chip Bars are such an easy delicious recipe! Chewy, full of chocolate chips, and buttery soft, these chocolate chip cookie bars are the best dessert!

Ingredients
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 14 tablespoons unsalted butter
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick cook oats (old fashioned oats will work here as well)
  • 1 cup milk chocolate chips

Instructions
  1. Preheat your oven to 350 degrees and lightly spray a 9 x 13 inch pan with cooking spray.
  2. In a medium bowl whisk together the all purpose flour, baking soda, and cinnamon.
  3. In a large bowl, beat together the butter and sugar until light and fluffy.
  4. Beat in the eggs on at a time and then the vanilla extract.
  5. Add the dry ingredients. Beat on low until integrated, then increase the speed until the dry ingredients are just combined.
  6. Gently stir in the oats and the chocolate chips.  Press the batter into the prepared baking dish.
  7. Bake for 25 minutes or until the edges are golden brown.  Allow the bars to cool, then cut and enjoy.
